Ingredients:
- 4 medium zucchinis
- 1 pound ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1/2 cup diced bell pepper
- 1/2 cup diced mushrooms
- 1/2 cup fresh spinach, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup shredded paleo-friendly cheese optional
Instructions:
Preheat your oven to 375F 190C
Cut each zucchini in half lengthwise and scoop out the seeds to create boats
In a large skillet, heat olive oil over medium heat
Add diced onion and garlic, saut until fragrant
Add ground turkey and cook until browned, breaking it into small pieces as it cooks
Stir in diced tomatoes, bell pepper, mushrooms, and spinach
Cook for a few minutes until vegetables start to soften
Season with dried oregano, dried basil, salt, and pepper
Mix well
Place the zucchini boats in a baking dish and fill each boat with the turkey and vegetable mixture
Sprinkle with paleo-friendly cheese if using
Cover the baking dish with foil and bake for 20-25 minutes, or until the zucchini is tender
Remove from the oven and let cool for a few minutes before serving
