Ingredients:
- 8 large mushrooms
- 2 cups fresh spinach, chopped
- 1/2 cup vegan cream cheese
- 1/4 cup bread crumbs
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions:
Before you start cooking, heat the oven to 375F 190C
Take the mushrooms stems off and cut them into small pieces
Add chopped spinach, vegan cream cheese, bread crumbs, nutritional yeast, minced garlic, salt, and pepper to a bowl
Get them all mixed together
Fill each mushroom cap all the way to the top with the spinach mixture
On a baking sheet that has been lined with parchment paper, put the stuffed mushrooms
Put some olive oil on top of the stuffed mushrooms
For 20 to 25 minutes, or until the filling is golden brown and the mushrooms are soft, bake in an oven that has already been heated
Enjoy while hot
