Almond Flour Pumpkin Chocolate Chip Protein Pancakes

For breakfast, these Almond Flour Pumpkin Chocolate Chip Protein Pancakes taste great and are good for you. These muffins dont have any gluten, are full of protein, and taste great with a hint of warm spices from the pumpkin. Great for a cozy fall morning or any time you want a tasty and healthy pancake treat.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup pumpkin puree
  • 2 eggs
  • 1/4 cup chocolate chips
  • 1 scoop protein powder
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin spice
  • 1/4 tsp vanilla extract
  • 1/4 cup almond milk
  • 1 tbsp honey optional
  • Cooking spray or oil for the pan

Instructions:

Put almond flour, protein powder, baking powder, and pumpkin spice in a bowl and mix them together

Whisk the eggs, pumpkin puree, vanilla extract, almond milk, and honey if you want together in a different bowl

Add the wet ingredients to the dry ones and mix them together until everything is well mixed

To make the pancake batter, slowly fold in the chocolate chips

Put a nonstick griddle or skillet over medium-low heat and lightly coat it with oil or cooking spray

Put out 1/4 cup of the pancake batter at a time on the pan and spread it out into a circle

The pancakes should be cooked for two to three minutes on each side, or until they are set and golden brown

Do it again with the rest of the batter, adding more oil to the pan if needed
