This macaroni salad made in the style of Hawaii is creamy, sour, and full of flavor. This dish goes well with any barbecue or luau.
Ingredients:
- 1 lb elbow macaroni
- 1 cup mayonnaise
- 1/4 cup whole milk
- 1 tbsp apple cider vinegar
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated carrot
- 1/2 cup finely diced onion
- 1/2 cup finely diced celery
Instructions:
Cook macaroni according to package instructions until al dente
Drain and rinse under cold water
In a large bowl, whisk together mayonnaise, milk, vinegar, sugar, salt, and pepper until smooth
Add cooked macaroni, grated carrot, diced onion, and diced celery to the bowl with the dressing
Toss until everything is evenly coated with the dressing
Cover and refrigerate for at least 1 hour before serving to allow flavors to meld
