Ingredients:
- 1 cup prickly pear cactus puree
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Cactus ice cream cones store-bought or homemade
Instructions:
In a saucepan, combine prickly pear cactus puree, heavy cream, whole milk, sugar, vanilla extract, and salt
Heat the mixture over medium heat, stirring constantly until sugar is dissolved and the mixture is well combined
Do not let it boil
Once the mixture is heated through, remove from heat and let it cool completely
Pour the cooled mixture into an ice cream maker and churn according to manufacturers instructions until it reaches a soft-serve consistency
Transfer the churned ice cream into a container and freeze for at least 4 hours or until firm
Scoop the cactus ice cream into cactus-shaped ice cream cones
Serve immediately and enjoy your refreshing cactus ice cream cones
