Ingredients:
- 4 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeo pepper, seeded and finely chopped
- 1 tablespoon vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- Toppings of your choice: salsa, avocado, shredded lettuce, diced tomatoes, etc
Instructions:
Boil the diced potatoes until tender, about 10 minutes
Drain and set aside
In a large skillet, heat the vegetable oil over medium heat
Add the chopped onion, minced garlic, and jalapeo pepper
Saut until softened, about 3-4 minutes
Add the boiled potatoes to the skillet along with the ground cumin, chili powder, salt, and pepper
Cook, stirring occasionally, until the potatoes are lightly browned and crispy, about 8-10 minutes
Warm the corn tortillas in a separate skillet or in the microwave
Fill each tortilla with a generous spoonful of the potato mixture
Top with your favorite toppings such as salsa, avocado, shredded lettuce, and diced tomatoes
Serve immediately and enjoy
