Smoked Salmon & Avocado Open-Faced Egg Sandwich

On top of healthy whole grain bread, this open-faced egg sandwich has the rich flavors of smoked salmon, creamy avocado, and a perfectly cooked egg. At any time of the day, its a tasty and filling meal.

Ingredients:

  • 2 slices whole grain bread
  • 1 ripe avocado, mashed
  • 4 slices smoked salmon
  • 2 eggs
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Fresh dill for garnish optional

Instructions:

Toast the whole grain bread slices until golden brown

Spread mashed avocado evenly over each toasted slice

Layer 2 slices of smoked salmon over each avocado-covered bread slice

In a non-stick skillet, heat olive oil over medium heat

Crack the eggs into the skillet and cook to desired doneness, seasoning with salt and pepper

Carefully transfer each cooked egg onto the smoked salmon layer of each sandwich

Drizzle lemon juice over the egg and salmon

Garnish with fresh dill if desired

Serve immediately and enjoy
