Ingredients:

  • 1/2 cup unsalted butter, melted
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • Powdered sugar, for dusting

Instructions:

Melted butter and granulated sugar should be mixed together well in a mixing bowl

Mix the eggs in and whisk the whole thing until its smooth

Add the all-purpose flour, baking powder, and salt by sifting them in

Mix the dry ingredients into the wet ones slowly

You need to mix the eggnog, vanilla extract, and nutmeg into the batter until it is smooth and well uniform

Wrap the bowl in plastic wrap and put it in the fridge for at least an hour to cool down and set

Set the oven to 350F 175C and heat it up

Use butter to grease the madeleine molds and a little flour to dust them

Fill up each mold about three quarters of the way to the top with the chilled batter

Before you put the madeleines in the oven, heat it up

Bake them for 10 to 12 minutes, or until they puff up and the edges are lightly golden

After taking the madeleines out of the oven, let them cool for a few minutes in their molds before moving them to a wire rack to cool all the way down

After the madeleines have cooled, sprinkle them with powdered sugar

With a coffee or tea, these eggnog madeleines are a great treat
