Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh strawberries, diced
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 egg
- 2 tablespoons heavy cream for brushing
- Additional rolled oats for topping
Instructions:
Start by heating the oven to 400F 200C
All-purpose flour, rolled oats, sugar, baking powder, and salt should all be mixed together in a large bowl
Mix the cold butter cubes into the dry ingredients
You can use your fingers or a pastry cutter to cut the butter into the dough until it looks like big crumbs
The diced strawberries should be added slowly
Add the buttermilk, vanilla extract, and egg to a different bowl and mix them together using a whisk
Add the dry ingredients to the wet mixture and stir just until everything is mixed together
Dont mix it too much; a few dry spots are fine
Spread the dough out on a lightly floured surface and knead it a few times to make it stick together
Make a circle out of the dough that is about an inch thick
Cut it into 8 wedges that are all the same size
Put the scones on a baking sheet that has parchment paper on it
Spread heavy cream on top of the scones and then sprinkle more rolled oats on top
After the oven is hot, bake the scones for 15 to 18 minutes, or until they are golden brown and cooked all the way through
Take it out of the oven and set it on a wire rack to cool down a bit before you serve it
