This dish is hearty and tasty, and its great for Thanksgiving or any fall meal. Everyone will enjoy this dish, whether they are vegan or not. It has sweet acorn squash, savory quinoa, and beans.
Ingredients:
- 2 medium acorn squash, halved and seeded
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup cooked quinoa
- 1 cup cooked black beans
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro, for garnish
Instructions:
Preheat oven to 400F 200C
Place acorn squash halves cut-side down on a baking sheet lined with parchment paper
Bake for 30-35 minutes, or until tender
In a large skillet, heat olive oil over medium heat
Add onion, garlic, and bell pepper
Cook until vegetables are softened, about 5 minutes
Stir in quinoa, black beans, corn, tomatoes, cumin, smoked paprika, salt, and pepper
Cook for another 5 minutes, stirring occasionally
Scoop the quinoa mixture into the roasted acorn squash halves
Garnish with cilantro
Serve warm and enjoy
